Date 'n' Nut Loaf
INGREDIENTS
l25g margarine
125g soft brown sugar
2 eggs size 3 beaten
75g.chopped walnuts
125g. chopped dates
few drops vanilla essence
2 tbsp.milk
225g. plain wholemeal
flour
I ½ tsp baking
powder
tsp salt
3.4 tbsp syrup
50g.coffee sugar
crystals to decorate
METHOD
1 Cream together the mar
garine and sugar until
light and fluffy.
2 Gradually add the eggs, mixing gently, then fold
in nuts,dates,essence,milk,flour, baking powder and salt with a metal spoon until evenly mixed. To give a sot
consistency and moistness, add 1-2 tbsp/15-30 ml golden syrup.
3 Spoon into the tin and cook on Medium-High
(75%) for 12-14 minutes Stand for 5 minutes before
turning out. Cool and then wrap welL in foil or freshcling until ready to serve. Brush with remaining syrup, warmed, and sprinkle with coflee crystals. Serve sliced and spread with butter.
